I wanted to share the recipe for the meal I made ahead of time yesterday. I found the recipe on realsimple.com. Here's the link: Chicken With White Beans and Tomatoes
The recipe calls for bone-in, skin-on chicken thighs, but I used boneless skinless chicken breasts. And it called for cannellini beans. I didn't know what a cannellini bean was, but I found some at Sunflower Market and learned it's a white kidney bean. I didn't know such a thing existed!
As I tossed the ingredients together, it looked colorful, appetizing, and healthy. Turned out quite tasty too.

ReplyDeleteThat does look yummy! I think if you wanted to save money you could use diced regular tomatoes instead of the grape tomatoes, and you could also change the color and flavor up by using black beans instead of the white ones.
ReplyDeleteSusan... the recipe can definitely be baked later. I wish I would have had time to bake it that evening... it would have tasted even better fresh out of the oven, rather than re-heated.
ReplyDeleteLynn...those are great ideas for switching things up. I happened to have grape tomatoes since I had bought some on sale, but typically I don't have those around. And the black beans would be less expensive (I think) than the white kidney beans. I think the cannellini beans tasted similar to white navy beans, so I might opt for those next time.
