The old reliable.

I've been so busy lately that I haven't had a chance to plan out some menus.  I do so much better preparing meals when I have a plan.  (See: Making a menu plan.)

Tonight I couldn't think of what to fix for supper, so I pulled out the old reliable... sauteed veggies with whole wheat pasta, drizzled with olive oil.  I use whatever veggies I have on hand and this time it was zucchini, tomatoes, mushrooms, garlic, and chopped Kalamata olives, sprinkled with sea salt and white pepper.

Successful meal.  I wish everything I whipped together at the last minute would turn out so great!

  1. I'm making our menu plan/shopping list today, too! It's a big chore, but it feels so good to not have so much time consumed each night asking "What's for dinner?"

    1. I need to include more quick (yet healthy) meals to prepare. My last menu plan had too many takes-too-long-to-prepare meals, so I never felt like making them.

  2. Sounds delicious! Maybe I'll try that over brown rice pasta next time I have a tomato/zucchini day. They're not really on rice day, but I could trade rice and millet days. I'm trying to stick to the rotation diet again because I started getting heartburn. and eating more veggies!

    1. I've never had brown rice pasta... how does it taste compared to whole wheat pasta? Similar in texture or flavor? I should try that sometime.
